My aunt Gwen was a great cook and she kept go-to, quick recipes that were always as good as her spent-all-day-making recipes. This was one of my favorites from her go-to, quick list.
I was trying to make chili with what I had in the fridge and this is what I came up with and it actually turned out really well (my boyfriend loved it!).It's also low in sodium and has high protein and fiber.
I saw this recipe made on The Biggest Losers. I didn't have any ground turkey on hand, so I used lean ground beef. This is double the origianl recipe. Makes great leftovers for lunch.
A hearty meal casserole that satisfies! Trade ground turkey for beef in this recipe to cut a few calories and grams of fat, but I love the real deal.

My Grandma used to make this and it has passed down through the family with each of us adding our own little bits. You can substitute the potatoes for pasta if you want to use the mince for bolognaise.
This recipe was a finalist in the SparkPeople Un-Chained Recipe Contest!I chose to re-make the Crunchwrap Supreme from Taco Bell because Taco Bell used to be one of my favorite fast food restaurants. Also, it is still my boyfriend's favorite fast food chain and nearly every time he goes there, he will order a crunchwrap supreme. The funny thing is that most Mexican and Tex-Mex dishes are fairly simple to make... so I knew that it would be fun, delicious, and not too challenging to re-make this item!
At just 260 calories per serving, this hearty stew will carry you straight through the winter months!
