One of my favorite recipes, lightened up by using a canola oil-based crust, and egg whites instead of whole eggs.
I wanted to eat more fish, but was finding it bland. My husband made this sauce, and I love it.
Quick & easy to make. Can be assembled ahead of time and pop in the micro about 15 minutes before serving.
I cook this on the bbq with potatoes, but it's excellent with brown rice.
A quick recipe I came up with cooking for my honey after a lovely day together - lounging, shopping and talking. :)
4 cups (about 1/2 of a 12-oz. bag) dry coleslaw mix
4 oz. cooked and chopped ready-to-eat shrimp
1/2 cup canned sliced water chestnuts, drained, cut into strips
1/4 cup bean sprouts, chopped
2 scallions, chopped
1 stalk celery, thinly sliced widthwise
2 tbsp. reduced-sodium/lite soy sauce
1 tsp. crushed garlic
1/4 tsp. ground ginger
1/8 tsp. salt
Dash black pepper
6 large square egg roll wrappers (stocked with the refrigerated Asian items in the supermarket)
Optional: sweet & sour sauce
A very quick recipe for Wasabi Tuna sandwich spread. Makes enough for 2 sandwiches.
Mom and I love Tuna Casserole and we were looking for a slightly healthier option. This seems to work pretty well. :) Also, can be topped with wheat germ instead of crackers. Neither of which has been added into the recipe so you can choose which you like best. Just make sure to add whatever you choose to the tracker later.
