This is a great homemade dressing that I found because I couldn't find Honey Dijon without lots of sugar or high fructose corn syrup. I use all organic ingredients.
Slice peeled cucumbers, soak in salt water for a few minutes, then drain. Combine vinigar and Miracle Whip to taste - more vinegar may be added as needed. Mix with cucumbers completly. Serve cold. May be refrigerated, but best eaten at time they are made.
I made this quick and easy salad for myself and it tasted AMAZING! It is healthy and will actually leave you feeling full. The serving size is large (you could even share the salad with a friend if you so choose.) I cooked the chicken on the stove with canola oil and garlic, but chicken could also be baked or grilled. Yummy Chicken salad made with skinless rottisere chicken breast and loads of veggies and fruit. The curry and the pineapple give it a nice exotic taste...sweet and mildly spicey....great with triscuits or with lettuce greens.
