Chicken Enchilada Recipes

This one-dish meal is great for a weeknight meal or as a appetizer for a party. Serve it with steamed broccoli or a green salad.

Yummy healthy enchiladas

Using many reduced fat items in this recipe does not change the flavor, but makes it much lower in fat!

I threw this together from what I had in my pantry at the time. With proper planning, I'd use fat-free soup and sour cream. It is delicious as-is, but fat could certainly stand to be cut.

You can put the chicken into the slow cooker while still frozen, so prep time is virtually non-existent! A great choice to throw in before bed for lunch at work or in the morning for that night's dinner.

This recipe calls for two pounds of chicken, also because it was what I had available (three large breasts), but would make a great meal with just one pound, too.

I served this along with brown rice and black beans. Tasty!

Enchiladas Suizas are a chicken and cheese enchilada served with a green sauce. This is my conversion into a casserole dish that my kid wolfed down. Its not spicy, easy casserole, great for potlucks. You can make it vegetarian by removing the turkey.

This is how I make my green chicken enchilada. The recipe is a pie format and not individual wrapped echiladas.

Corn tortillas layered with chicken, corn, olives, onions, hot peppers, mexican cheese topped with a med. hot red chile enchilada sauce.

All of the flavor of saucy and tangy chicken enchiladas packed into a hearty, guilt-free stew. The tortillas go right into the slow cooker and melt into the stew for flavor and texture.

Shred the chicken after it cooks in the crockpot.

A fun twist on a Mexican favorite! Summer zucchini hollowed out and stuffed with shredded chicken, enchilada sauce, cheese and scallions. Serve this with cilantro lime rice and you'll have yourself a fiesta!
A few weeks ago I posted Sausage Stuffed Zucchini Boats and they were such a hit I've been thinking up new stuffing ideas, when it hit me... naked enchiladas!

If you've been following my blog for a while, you probably know how much I LOVE enchiladas. In the past I have posted recipes for Skinny Chicken Enchiladas, Cheesy Zucchini Enchiladas, Turkey Black Bean Enchiladas, and Creamy Chicken White Bean Enchiladas with Salsa Verde.
This idea is the perfect way to use up leftover chicken, plus it's perfect for low-carb and gluten-free diets - and yes, yellow squash would also work well.

A few notes: I usually have shredded chicken breast on hand, I like to throw a package of chicken breasts in the crock pot to use for recipes throughout the week, you can click here for the method. I love making my own enchilada sauce (nothing beats homemade), but to speed this up you can of course use jarred. And finally, I like to blanch the zucchini first so that it bakes quicker, but if that seems like too much work, just bake it an additional 10 minutes and it should be fine.
