They serve this at the Lifetime Fitness Cafe and it is AMAZING... I asked for the recipe and they printed it off for me. (I switched canned tuna for tuna steaks- I think it is less salty and fresher that way.)
The original recipe would yield 2Q so I divided everything down to yield 5 servings of 3 ounces each.
Once prepared - can be eaten as is, go on a salad, in a lettuce wrap or even on a sandwich. It is VERY spicy so beware.
Serve with lettuce and tomatoes. These burritos freeze well on bakin sheets or in baking dishes. Yield: 8-8ounces
This recipe is very easy and healthful. Those who are vegetarians they will love it. Good for snack, brunch or even breakfast. It is from the Middle East (Lebanon).
The serving size (and therefore number of servings) will depend on the size of your waffle maker.
For the waffle maker I have, I use just under half a cup of mixture and it makes about 8 waffles. Each waffle cooks for 95 seconds in my waffle maker and I have that written on the top of the machine in permanent marker.
You can use any sourdough starter, wholewheat, rye or white, but you do want it to be on the thick side, so when you feed it the night before, use a bit more flour than usual.
This is my interpretation (bastardized version) of Migas - a traditional Spanish egg and tortilla dish. This is usually eaten as breakfast, but I eat it morning, noon, and night!
You can really do a lot with this recipe, as per your tastes. Salsa, beans, cheese, cilantro, jalapenos, and chorizo are all good to go. I keep mine pretty basic, but spicy.
It may not look that good, but trust me it's addicting. Technically, it is a vegetarian dish in that it contains no meat. As a former vegan, this was one of the things I missed the most.

This recipe is quick, easy, and very ymmy. Serve this will a piece of fruit and you are all set.
So easy to make. Mine here is made with Low Fat Turkey Sausage but the recipe calls for Bacon. Throw in what ever veggies you have on hand or make with diced low fat ham or turkey as well.

So far, this recipe for Asparagus and Spring Onion Tart is my fave. The crust isn’t soggy at all and has a wonderfully rustic flavor. A slight hint of lemon tickles the taste buds with every bite. These gluten-free, vegan pancakes are rich and buttery, fluffy, and better than any wheat flour pancakes you could make =) Try subbing in protein powder for half of the starch.
