A yummy salmon salad to serve over greens or on a sandwich. It is very nice on slices of cucumber. Feel free to eyeball/ taste test amounts of ingredients. I did- had to estimate for a written recipe.

This is a rich and creamy very filling desert. I use coconut extract, but you may substitute any flavor extract you like and the shredded raw coconut is not necessary and will cut back on the calories as well.
An improved and more flavorful version of my "Tuna Waldorf Salad with Pear". The Greek yogurt really makes the salad fresher and lighter. Though the calories in this one are slightly higher but it is due to increase of protein.
This pan-fried fish is great if you are watching your carb intake since the "breading" is actual almond meal.

This is a low carb supper soup. Not low fat, purposefully. Fats are allowed on this eating plan. Serving size is about 2 cups. I would have put more cauliflower in the soup if I had more and I would have used chicken broth if I had that. But this was made with what I had. Still turned out really good and very similar to the restaurant version.
