Basic braised mince for 3 meals
This recipe is the basic for Three Tumbledown Recipes From the Braised Mince: Divide the braised mince into three which then makes:
1. Mousaka - add slices of cooked potato on top of a roasting pan full of braised mince, then top with a cheese white sauce and cook for 200 degrees for about 25-35 minutes. Add grated or sliced carrots into the mince mix, or even peas, or any other vegetables you have lying around that need using up.
2. Bolognaise sauce
Chop up some onion, add tin of tomatoes and red wine if available and some mushrooms
3. Chilli con carne
Place a little bit of olive oil in a pan, throw in some chopped onions and chopped garlic. Add a teaspoon of chilli powder, a touch of cumin, some ground coriander and a teaspoon of smoked paprika. Add some red wine (a large glass). Let it reduce. Add a tin of chopped tomatoes, splash of Worcestershire sauce. Chop a few chillies and put those in. Add two large handful of chopped mushrooms. Add 1/3rd of the previous braised mince mix. Pour in some beef stock, probably about ½ pint to start with - you can always add a bit more later if it wasn't enough. Chuck in a tin of kidney beans. Place this on a gentle heat and simmer for 45 minutes. Serve with rice or tortilla wraps. (bake a chopped up tortilla wrap sprinkled with a spray oil and some salt to make tortilla chips homemade.)
