Spinach and onion Tortilla
The traditional Spanish tortilla is made with browned potatoes and eggs. This variation of mine uses caramelized onions and fresh spinach for less calories and more nutrition, while providing maximum flavor. Everyone loves this recipe. It's perfect for a light dinner with a salad. Or cut into smaller portions to serve as a tapa, like in Spain.Also perfect for brunch.
