A tasty treat I developed years ago as a vegetarian dish and added in turkey. Good for a Sunday night meal with plenty leftovers. Freezes well, too.
The veggies can be exchanged for others, my picky eaters prefer finely diced squash since in texturally disappears into the beans and meat. And I like a LOT of spices, so taste it a few times along the way.

I make my own guacamole with the avocado by just adding garlic salt and chili powder to taste. You could lessen the sodium if you used your own spices too.
A delicious and very quick dinner for two. Feel free to tweak the spices and seasonings - I like mine pretty spicy, but you can go easy on the garlic, ginger and chili if you prefer a milder dish.

These tasty burritos are fast enough to make after even the busiest of days...and are great with a green salad on the side...I find they really are best with the smoky, yet robust, flavor of Ancho chili powder, but any will do fine...just adjust the amount as necessary to counteract a potential SU-heat overdose...
