Attempt at healthy mac n cheese

Very simple and delicious mac and cheese you can make in your pressure cooker when you want a comforting treat.

Simple to make with whole foods. A nice creamy mac & cheese sauce with bacon, because bacon makes everything better.

You can add some par cooked broccoli to lighten this dish.

I got this idea from a internet newsletter. However the one in the newsletter just didn't appeal to me. I knew that JoAnna had a really good Mac Salad that started like Mac and Cheese. So here is my frankenrecipe were I pieced together Jo's awesome Mac Salad, and what I thought would make a really neat autumn comfort style Mac and Cheese dish.

Cooking the noodles more "risotto-style" allows for the use of much less cream and cheese, without sacrificing the actual creaminess of the dish.
