After having lunch with a friend I asked her to share her recipe for the yummy soup she served. She wrote the ingredients on a piece of paper but explained she doesn't use a recipe, just adds "the right amount" of each ingredient. I put this recipe together using her list and my knowledge of cooking.

This chicken soup is a great source of electrolytes, fats and minerals while remaining low-carb. Cook it large batches and refriderate or freeze to eat during the week.

This recipe came from the chicken enchilada recipe I submitted earlier. I didn't need to make that many chicken enchiladas, so I made this up to make a slightly different meal. I used the remaining sauce from the chicken enchilada recipe, then added the remaining chicken and added the chicken broth.
