Yummy vegan/gluten free potato leek soup

Low, low fat Potato Soup, who would of thought? I saw a bunch of recipes online, and kind of made it my own especially for calculating purposes.

My entrire family loves this soup so much I make a double batch and freeze individual portions for a quick meal later.

This soup is great on the stove or in the crockpot! It's creamy and warms the tummy - my kids love it!

Easy peasy! Great taste!

Someone gave me a copy of this recipe to try so I have no idea where they got it.

I modified Paula Dean's recipe by using healthier options and adding some more flavor through seasoning.
