Greek Lentil Soup
IN a hot stock pot, add oil unil hot. Then add the chopped carrots, celery, tomatoes and onion. Cook for 3 minutes. Add the 4 cups of chicken stock, lentils and herbs. Simmer for 45 minutes or until the lentils are tender. Serves warm.
