This quick soup is flavourful, filling and great for a cold day! Plus its low-cal!
Options:
To make this vegetarian - substitute vegetable stock for Chicken stock.
To make it lower in fat/calories - substitute butter for cooking spray and use 1% or 2% milk mixed with starch instead of the cream

This is a version of the classic French soup known as Potage Bonne Femme. I have created my own recipe to suit people that have had bariatric surgery or people trying to add more protein into their diet.

This is less fat version of a recipe I found in cooking the French way, while doing a French unit study with my daughter.

A delicious and light addition to any fall meal. Can adjust for veggies available at time. Also can adjust spices per your liking. Works best by using a Dutch oven.

This isn't your ordinary potatoes and mild onion soup! The Yukon potato gives this soup a buttery flavor while the garlic and pepper give it a mild kick.

Not a Vichyssoise but a good hearty welcoming soup which I have been making since I was at the Aspinall Arms, Great Mitton, Lancashire.
I have served this soup to Sarah Fergusson, The Duchess of York, Roger Moore, Michael Caine and many other famous people however the person who stands out in my memories is Egon Ronay when he asked for a second bowl when we were at the Great Tree Hotel, Chagford, Devon.

I took Julia Child's Potato & Leek soup recipe and lightened it a little while adding some broccoli and chicken broth.

Made this up lookin thru the fridge, and it was worth saving the recipe and making again... Hope it is for you too!! Prep time is how ever long it takes you to cut the veggies; I'm on the slow side... lol
