Beef Barley Recipes

Easy to make, and you probably have all the ingredients on hand already. My mom use to make this in our family restaurant; it always sold out quickly!

Beef broth, onion soup mix and veggies flavor this filling soup.
It goes well with roast beef sandwiches.
Makes about 10 -1 cup servings

This is a hearty, filling soup that is perfect on a cold day! It's pretty healthy, but if you want to make it a little healthier you could use a low sodium broth. I like it with the 99% FAT-FREE broth in the recipe. You can also add a few stalks of celery, I didn't have any on hand as I was making this.

Easy to make and quite satisfying.

Feel free to add beef by browning in the pot with the oil before adding onions/garlic. You can also swap out beef broth for vegetable broth to make it vegan also.

It's a rare, rainy and cold day here in Arizona. Perfect for a bowl of rich beef stew. Served with a bit of crusty bread it's a comforting and warm meal.

Each serving is approximately 1 1/2 cup.

Hearty healthy soup warms you up on cold night. I love to serve this soup with homemade bread or muffins.

Vegetables, barley, and beef make this soup a full meal in itself.

Does well in the crockpot.
