Black-Eyed Pea Salad

This is a great showpiece for a party. My children and grandchildren ask for it and everyone else raves about it.
And there are virtually no carbs (except for the crackers you eat it with).

Low in carbs, high in protein, high in fiber.... A delicious way to enjoy picnic food without all the bread and condiments. Oh, and it's a really pretty dish : )

This is my mom's old recipe, but I tweaked it a little for lighter version. Serve over pasta, or in pita or just eat it as is, so delish!

Quick and easy!

This is a quick salsa that goes great with tortilla chips, chicken, and pita bread. It makes a great snack!

Mildly spicy black beans with a twist!

Finely chop peppers, tomato and onion. Then mix all ingredients together. Can serve warm or cold. I prefer warm. Serve with tortilla chips.

I was unable to calculate the nutritional value of the marinate. I've been told to add "1 weight watcher point" to a serving (1/2 cup). For those of you not doing weight watchers, I'd add 60 calories for the oil and sugar. If anyone knows how to calculate marinate, please let me know!!!
