This dish is almost fat-free, but is still very creamy and tasty.

I'm pretty proud of myself with this one! I was curious to see how I could use soft tofu to create an alfredo-like sauce. I think I succeeded in creating a creamy, cheesy sauce that's not totally overloaded with calories and fat like most cream-based sauces. The added protein and omega-3's are also a benefit!

Tastes like Comfort food.

If you prefer not to use a microwave, cook the fish on a plate over a pan of simmering water. Any smoked fish is delicious in this dish, including trout, smoked or hot-smoked salmon, and cod.

I found this Ronzoni/Classico recipe featured in our Sunday paper and it looks fantastic. I modified it a bit to cut calories and up the nutrients.

I used Rotini noodles for this dish, but fettucini or any pasta can be used. Rotini is my daughter's favorite and since she's seven... she wins!

I found this recipe online-it looked delicious but I wanted to lighten it up a bit while still keeping the rich and creamy flavor. You could easily leave out the chicken for a lovely vegetarian meal.

A flip on pesto sauce- this uses spinach instead of pesto. Unless you're like me; I add both spinach and basil!
