Everytime I make these, they are everyone's favourite new treat! No one will be disappointed! I have requests for these all the time.

Both shells and filling can be made ahead and assembled when needed. The shells can be frozen for up to a month, then thawed at room temperature an hour before filling. The filling can be made up to two days before and refrigerated. Heat the filling gently, and serve immediately in the shells.

Curried Chickpeas Zucchini Couscous

Curried Chickpeas and Zucchini with Cous-Cous

2 teaspoons turmeric
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon cinnamon
1/2 teaspoon cardamom
1 onion, chopped
2 cloves garlic, minced
2 small zucchini, sliced
2 small tomatoes, chopped
2 cups cooked chickpeas
2/3 cup raisins
1 cup cous-cous
1 1/2 cups reserved liquid from cooking chickpeas

"Dry fry" the spices a few minutes, stirring constantly. Add the onion
and garlic and saute in as much of your favorite saute liquid as
necessary to keep them from sticking. (I use reserved liquid from
cooking chickpeas.) When onions are translucent, add the zucchini. Cover
and cook a few minutes, steaming the zucchini somewhat. Add the
chickpeas, tomatoes, and raisins. Cook until the veggies are done to
your satisfaction.

Autumn is a wonderful food season. Squash are easy to come by and inexpensive. I bought a squash even though I was staying where there was a kitchenette with a microwave. I was not sure how I was going to cook it. But it was easy and the results absolutely delicious. I added honey and low-sodium curry powder and voila!

For a vegan dish, substitute stevia, evaporated cane juice, rice syrup, maple syrup or agave nectar.

You do not have to buy special, more expensive curry powder to find a low-sodium variety. Homemade curry powder is simple to make. Simply read all the curry powder labels at your favorite Asian grocery until you find the curry with the lowest sodium count. The Spice Hunter also makes a great curry powder with no added salt.

When you open the squash, scoop out the seeds and put them aside to prepare for a crunchy treat. Those instructions are not included here.
