Quick & Easy Meal
This is the version cooked throughout most of Southern Louisiana, and is what my hometown means when calling themselves the "Jambalaya Capital of the World". It does not contain tomato like the Creole version usually made in New Orleans.

Delicious and filling
MODIFIED 5/3/10 - reduced the fat and changed the sausage to chicken instead of turkey, also used onion powder instead of onions.Good old-fashioned fried potatoes with sausage & onions. You can make this with less butter and/or oil to lower the calories even further. The smoked turkey sausage is a little high in sodium, but I haven't been able to find any lower in my area.
Don't let their looks scare you; They're great for those who love the onions and the "cruch" more than the greasy batter in traditional onion rings. Try them with some reduced calorie ketchup and you'll be in heaven.Low Fat + Low Salt + Low Calorie = Guiltless

When I visited my first husband's family in Mexico, my mother-in-law made this, and I had to have the recipe. It is a staple recipe still in my household.

Whole wheat version of the English classic
Moist, delicious cake that your friends won't know is healthier for them than the regular version! My mother-in-law made this for my birthday, based on a regular recipe with Splenda substitutes and adding a box of sugar free pudding to keep moisture in the cake.
I adapted this from other recipe on here, since I only had the sausage on hand..give it a whirl..
