Any pancake batter will do the trick, this one uses coconut flour.Mildly tart apple + nutty cinnamon + sweet pancake batter = delightful breakfast and a fun presentation.
Surprise is a naturally sweet syrup made from the peels. No pan, no oil - so these cakes are flavorful and nutritious by replacing most of the flour with whey powder. No added sugar!

This is a recipe adapted from the allrecipes.com site. I needed something rather bland but tasty without meat for my husband who is getting over the stomach flu. I thought this would be a good choice.

Beat Eggs, milk, flour until smooth. let batter rest. coat 2 pie pans with butter spray. combine sugar and cinnamon with apples and put in bottom of two pie pans. Pour batter over and bake at 425 for 20 minutes.

This recipe is found on the back of the Aunt Jemima Whole Wheat Pancake Mix box and when made into 18 muffins, instead of the 12 it states, they're only 122 calories each. YUMMY!
