Spicy Blackened Tilapia
I found this recipe online, originally from aquaticcommunity.com. I had to add some olive oil to get it to cook without sticking, but switched the white bread for rice (would have used brown if we had any) and reduced the salt content significantly. Once the spice blend is mixed, it's a simple recipe. Absolutely DO heat the skillet on high until the oil begins to smoke. The recipe said leave it on high, but I had no trouble reducing it to medium high after adding the fish to the pan.
