Chicken Veggie Stew Recipes

Some days, and quite honestly, lately it's been most days, I don't have the energy to cook. So instead, in the morning before heading out, I chop up a bunch of veggies, throw them along with chicken breast together with some gravy and ketchup, and slow cook everything while I'm at work. This recipe is easy, hearty, and tasty. And perhaps best of all, super good for you since it's low fat, low calorie, and high in vitamin A!

This is so easy to put together and takes less than 20 minutes to cook. Great work night supper. We serve it over brown rice and it is very satisfying.

An easy to make stew chock full of veggies and protein.

I wanted to use up some veggies that I had and came up with this. Super easy to make, you just dump the ingredients in the crockpot, set on low and let go for 6-8 hours.
I put this over spaghetti squash and used it like a sauce.

I came up with this recipe for easy and healthy dorm cooking

9 - 2oz chicken breast strips
1 can corn
16oz of chicken broth
10 oz mushrooms
1 green pepper
10 baby carrots
1 can tomato paste
1/2 tsp sea salt
1/2 tsp black pepper
1/2 tsp lemon pepper

This hearty and healthy one pot meal is a family favorite. Very high in vitamins A and C, and folate. It packs 7 grams of fiber and 37 grams of protein in it.

I couldn't find a crockpot recipe for chicken and vegetables so I created one myself.
