Substitute Egg Bake
Quick and easy breakfast bake uses egg subsitute, low fat cheese, shredded potatoes and lean diced ham. The dish is heavy on the protein and low in fat. Refrigerate or freeze portion size leftovers and you'll have some saved for later days.
One of the great things about this is that it's easy to change the recipe to your liking. Keep the basic components and portions the same (the shredded potatoes, egg substitue and cheese) and change up the other ingredients. Add mushrooms, onions or spinach. Use turkey sausage or turkey bacon instead of diced ham. Maybe don't use meat and make it all veggie.
