This is one of my very favorite dinners. It’s quick and easy to make and the fish comes out moist and flaky with a crunchy crust. Even non-fish lovers will love this! To make it gluten free, simply use a gluten free flour. Ground flaxseed is also an option!

This is my first attempt at making eggplant parmesan. I have been cooking with almond flour for over a year but I am in the middle of transitioning into a completely vegetarian diet. I try to stay non-dairy diet but wanted to try this recipe first with romano. There are options available for DF parmesan cheese or you can leave out the romano if you are looking for completely non-dairy.

I adapted this recipe from a South Beach diet version. In cutting the recipe in half, I forgot to half the almonds. I really liked the very nutty taste, but you can use half my amount to keep the proportions the same. The South Beach recipe also contains Parmesan cheese (2Tb) which I left out due to a problem with dairy.
