1 celeriac (approx 700g clean weight, larger will yield more servings), diced1 onion, choppedJuice of 1/2 lemon1/2 tbsp olive oilStock or stock pots, as required

Can use vegetable stock to make this vegan. Some people add a little heavy cream at the end to make it rich and thick. Salt and pepper to taste.

Wild rice smells intoxicatingly good as it cooks. Too often that scent is lost in and amongst other grains. Not here. Here, it is star. Attention paid to the quality and flavour of your soy milk will make all the difference if cream is not your thing. Adapted, heavily, from Deborah Madison.
This is a modification of Tal Ronnen's celery root soup, made over for low carbers. It's not vegan in this version because I use chicken fat and stock to replace the cashews, but you could make it vegetarian by switching out the chicken for cream &/or butter. The taste is sort of reminiscent of a good stuffing, and that is why I think it would be great as a first course for Thanksgiving, or any winter occasion.
I picked up this French salad somewhere in my culinary life and it's become a staple. Great colour and really easy to make - an excellent pot luck dish.
