Chicken Vegetable Barley Soup Recipes

There are SO many different ways to change up this soup -- add different veggies and herbs to suit your taste or use up whatever is in your pantry. The key, though, is to start with a good, homemade chicken stock; if you must use store-bought, go with a low-sodium, fat-free version.

I just threw this together one night and it was FABULOUS, filling and good for you! The perfect thick soup without any cream. I am trying to recreate the recipe with accurate measurements, but really I just threw stuff in, so as long as you don't add any extra chicken or barley the nutritional info will be correct. Go ahead and add what you like as far as amount of veggies (sans potatoes).
