This is very light and delicious, especially in the summer when the vegetables are fresh and flavorful! A great way to eat your vegetables!
I I found a similar recipe on allrecipes.com and modified it to lower the oil content and upped the veggies.
I make this on Sunday evening to use for snacking on throughout the week. Very easy to use as a side dish with lunch or dinner as well. The lime is not strong and/or sour on the vegetables but gives it a great flavor mixed with the Oregano and salt.
This tangy, sweet and crunchy salad/snack is great for a side or for a fix on those afternoon munchies!!
Serving size is 1/2 cup. Makes 6 cups, 12 servings.
