Low Fat Crockpot Stew with Ground Turkey!
This is a recipe that I have been experimenting with and tweaking for years. Always a family favorite and they didn't even notice the difference when I re-invented it using low fat ingredients and turkey instead of beef. The best thing about this meal is how much fun you can have making it. Since it is more of a "stew" I have added all kinds of different vegetables and sometimes even put left over pot roast in with it. Have fun and be creative!Halloween - Autumn Variation: Make this recipe just as described below but remove the potatoes and add one can (15oz) of pumpkin puree or 2 cups fresh pumpkin peeled and cubed, 1 tablespoon pumpkin pie spice and 3 Tbls. of brown sugar!

What to do with leftovers? Delish!!Makes a very filling meal. Add more broth (or less barley) for more soupy soup!!

This is cooked in a crockpot so throw it together and enjoy your day, can also be cooked on stove top simmered if prefer. My kids and hubby love this so much I make it at least once a week we top it with a little sour cream and some reduced fat shredded cheese along with a salad complete meal
Easy Crock pot
This is easy and delicious! It's a comfort food-- filling and warm. It's like Thanksgiving dinner all in one dish but without all the mess.

Another one pot wonder
Kind of like gumbo, kind of like stew - I always just start adding whatever sounds good.
Great for leftover turkey. I add the turkey carcus (fat & skin removed) to a pot with enough water to cover it and cook for a few hours on low, the meat falls off, I strain out the bones and have my broth. This is very filling and is great with a side salad. Sometimes I add chopped sweet potatoes or brown rice.
similar to another recipe on here for chicken taco stew, but I didn't have the tomato sauce and only had one can of stewed tomatoes, so I added 2 cups of beef broth and used groudn turkey instead of chicken breast... should be yummy!
