A deliciously decadent melty cheesy chicken dish, infused with Mexican flavors of Salsa con Queso, green chiles, and cilantro.

Served this on top of tostado shells (Guerrero Brand) with a serving of lite sour cream on top! (these items not included in nutritional calculation)

First things first, right? It’s pronounced like “chee-la-kee-lays”.

Okay, now that we have that awkwardness out of the way, go ahead and feast your eyes on this deliciousness:

awesome blend of brown rice, chicken and refried beans. You could add shredded lettuce and diced tomatoes after it is cooked.

I didn't have all the ingredients for any one recipe, so I made up my own based on what I had in my kitchen. I would suggest using low fat versions of the sour cream and cheese and adding black beans in addition to the chicken or alone for a vegetarian meal.

This is a very simple, easy to cook tasty meal. Enjoy!

Mexican Chicken Casserole

This tastes just like Weight Watcher's Smart Ones frozen Santa Fe Rice and Beans meal, only it is much lower in sodium, and it has chicken! YUM! It makes a ton, so invite friends or plan to have lots of leftovers. The whole family loves this dish! It tastes much naughtier than it is!!

This makes 8 servings.. My family usually eats half for dinner then saves the other half for lunch the next day.
