Quick and Easy Pork/Spinach & Ricotta
I like to eat my big meal in the morning to keep me going. Who wants to cook anything major that time of day though? So I whipped this up this morning and it smells & tastes great! Its a little high on the calorie/fat side, but I find I have a much easier time getting to lunch and eating lighter the rest of the day if I eat this way.
