Southwest Corn Chowder
Excellent winter soup! A single bowl makes a nice meal. Use less cheese or low-fat cheese for less fat or calories. Non-fat cheese doesn't work well in this case.
For a crockpot recipe, mix all ingredients together except for cheese and evaporated milk in a slow cooker, and simmer on low for 4 - 6 hours. Add evaporated milk and cheese 30 minutes before serving, stir, and serve when hot and incorporated. Do not boil.Submitted by: DOGSNHORSES
