Black-Eyed Pea Salad

I adapted this recipe from one that a friend made for tailgating. I hope you enjoy!

My Weight Watchers-friendly version of Blackeyed Pea salad.

Great for BBQ and as dip for chips

Low in carbs, high in protein, high in fiber.... A delicious way to enjoy picnic food without all the bread and condiments. Oh, and it's a really pretty dish : )

This is a quick salsa that goes great with tortilla chips, chicken, and pita bread. It makes a great snack!

A quick and easy twist on chips and salsa!

I was unable to calculate the nutritional value of the marinate. I've been told to add "1 weight watcher point" to a serving (1/2 cup). For those of you not doing weight watchers, I'd add 60 calories for the oil and sugar. If anyone knows how to calculate marinate, please let me know!!!

Love this stuff on chips, lettuce, or just with a spoon.

This can be served as a side dish with Mexican food or dip.

Wonderful picnic salad. Can be eaten alone as a side dish or served with corn chips as a dip. WW= 2 Points. Serves 10.

You can't really mess this recipe up since it is all about tickling your tast buds. Just add a little more of a litte less of the things you enjoy. If your tomatoes and jalapenos are in season and ready from your garden, use those instead of rotel. I really like to add fire roated peppers to keep it different. This is a great substitute for creamy potato or pasta salad since it has almost NO fat with good protein and fiber content. Enjoy!
