Asian Chicken Salad
This is an adaptation of a recipe from a favorite restaurant that doesn't operate where I live. The fresh taste of this always makes me feel like summer time. The mixture of fruits/veggies is also great on plain grilled meat. I make up quite a bit of it and freeze it in individual serving bags so I can either have it on the salad or as a topping/side dish for meat. I use ranch dressing, but it is also good with a honey mustard.
