Green healthy goodness in a delicious soup!

This is based on the Basic Green Soup from NPR's "The Splendid Table" by Anna Thomas. Where she uses yellow onion and chard, I substitute Vidalia onion and southern greens like turnips or collards. She garnishes with a swirl of olive oil while I use a dollop of fat-free Greek yogurt mixed with garlic powder.

Stuffed green peppers can be putsy to make: browning the meat, adding the sauces and seasonings, stuffing fresh peppers and baking. This Stuffed Green Pepper soup gives you the taste of stuffed green peppers but much faster! When you make this recipe for the freezer, double or triple it so you have additional meals on hand without the extra effort. This can be made ahead as a freezer meal for a quick last minute dinner.

Use large soup pot to bring all the ingredients of this delicious, healthy soup together. Use immersion blender to puree, or transfer to blender in batches.

My husband and I like this any time of year, but especially during winter! Add some toppings such as shredded cheese, avocado and sour cream. It's so easy, just add to the crock pot and yum!

Very savory soup, goes great with a rye cracker as a snack or as a veg requirement at meal time. A 2 c serving is probably 2.5-4 servings of veg.
