CUBAN BLACK BEAN BAKE
I LIKE TO SAUTEE THE ONION IN THE EVOO, THEN ADD THE BEANS AND TWO LIMES AND SPICES LIKE CUMIN, SALT, PEPPER, ETC. DURING THIS TIME I MAKE THE BROWN RICE. BYTHE TIME THE RICE IS DONE, THE BEANS SHOULD BE DONE AS WELL. COMBINE ALL INGREDIENTS (I THINLY SLICE THE AVOCADO AND LAYER THROUGHOUT)ADDING THE .5 CUP OF CHEESE IN THE COMBINATION AND USING THE OTHER 1 CUP OF CHEESE TO TOP. THEN BAKE AT 375'F UNTIL CHEESE IS MELTED AND BUBBLY (10-15 MINUTES)
