I've created a healthy twist on gratin by combining some highly rated recipes from allrecipes with another gratin recipe from SparkPeople that didn't have enough detail in the recipe for me to follow/didn't look creamy enough/didn't want to use egg. First result is surprisingly v. tasty!

This isn't your ordinary potatoes and mild onion soup! The Yukon potato gives this soup a buttery flavor while the garlic and pepper give it a mild kick.

This is less fat version of a recipe I found in cooking the French way, while doing a French unit study with my daughter.

Leeks, Potatoes, Garlic are all available in the fall/winter from your local farmers' market.

This dish is great for Thanksgiving or anytime. A nice seasonal accompanying side dish is Roasted Brussel Sprouts.

I used fresh Rosemary from our organic garden, and Organic Breadcrumbs and Vegetable Broth from our local health food store. Out supermarket carries organic parmesan cheese by the pound block, and organic olive oil.

This is a version of the classic French soup known as Potage Bonne Femme. I have created my own recipe to suit people that have had bariatric surgery or people trying to add more protein into their diet.

Not a Vichyssoise but a good hearty welcoming soup which I have been making since I was at the Aspinall Arms, Great Mitton, Lancashire.
I have served this soup to Sarah Fergusson, The Duchess of York, Roger Moore, Michael Caine and many other famous people however the person who stands out in my memories is Egon Ronay when he asked for a second bowl when we were at the Great Tree Hotel, Chagford, Devon.

I took Julia Child's Potato & Leek soup recipe and lightened it a little while adding some broccoli and chicken broth.

Healthy and hearty. Not necessarily the prettiest...
