This is an alternative to corn bread, it's more doughy! Also, if you like a "sweeter" corn bread, add a bit more sugar.
My mom sent me this recipe and I just had to try it. It's great for pot-lucks and as a side dish. Add cooked chicken in the chile layer to make it a meal all it's own!

A good Southern side dish like Mom used to make. I've made a vegan version using almond milk instead of buttermilk. Blander, but you can spice it up.
This is the classic jiffy corn casserole. Used 1/2 the butter called for, light sour cream, salt free corn. Still a work in progress.
I've modified the recipe below a bit by halving the butter and adding half a cup of applesauce instead, and a tablespoon of molasses. Delicious!
