Gluten Free Pumpkin Muffins
Combine sugar, oil, and eggs. Beat well. Sift all dry ingredients into another bowl. Add to oil mixture and mix well. Stir in pumpkin and vanilla. Spoon into greased muffin tins. Fill 3/4 full.
