Steam the 2 steamer Cauliflower bags, and then mash or grate to desired consistency. Pan fry the the bacon, and set aside. To make the cheese sauce: Add 1/2 cup butter, 1/2 cup heavy cream, and cook on med- low, stirring until butter melts. Then add 4 tablespoons of cream cheese and stir well until thoroughly melted and mixed. Then add 2 cups sharp cheddar cheese. Once that is all mixed, add bacon pieces. Combine well and mix in the cauliflower.

Very easy soup to cook in the crockpot all day or make on the stove. 5 WW points per 1 cup serving!

This is an easy to make soup with lots of flavor. I usually do not put the cheese in though.

Delicious! I found some natural shredded Chipotle Cheddar Cheese with Chipotle Peppers (Bistro Blend) by Sargento at Market Street grocery store, not planning to use it for a recipe. I looked in the fridge and didn't see any Monterrey Jack cheese, so I used the Chipotle Cheddar for this for this, and it tasted great! The original Recipe used 3/4 cup crushed seasoned stuffing instead of the Ritz Crackers, and 1-1/2 cups shredded Monterrey Jack Cheese instead of Cheddar. They also used 1 4 ounce can of chopped green chili peppers. I'm not sure you could substitute a fat-free sour cream for this, but it wouldn't hurt to try if you're watching fat grams.

I make this quickly when I am tired of simple steamed veggies my family loves this. I usually add water to make the sauce around it and bake in the oven for about 20 minutes.

Experimenting with low carb meals. I would leave out the flour in the future and count on the blended cauliflower to thicken the soup
