The recipe is very versatile and you can substitute soy milk for regular or even buttermilk and honey for water and sugar substitute or substitute the whole eggs for eggbeaters! It makes a wonderful, filling, and guilt free breakfast. Most pancakes and waffles have about 400 calories each, these only have 110! I usually make about 16 waffles in my Belgian waffle maker, but you could make even more pancakes or mini waffles!

This is a low carb waffle recipe that uses pork rinds instead of flour (and amazingly doesn't taste a bit like pork rinds). I found it on forum.lowcarber.org. I have modified it to increase splenda, vanilla and cinnamon amounts. It freezes well, and yu can pop them into the toaster in the mornings.

This recipe works great with any type of bean. Beans can be soaked overnight, the water drained and changed and the beans will last for approximately 10 days in the refrigerator. The soaked, yet uncooked beans, can also be frozen so they are ready to use another day. It takes about 1/2 cup of dried beans to make 1 cup of soaked beans.

IF YOU WANT TO HALF THIS RECIPE TO 2 - 3 WAFFELS: I found if you half this recipe and substitute the milk with 1/8 cup cream and 1/8 cup cashew milk (water or other milk substitute works too like almond milk etc...) it makes the best ever even better. If you do this cut the flour back to about a half cup.
