Veggie, Ham & Egg Cups
I love quick and easy dishes that I can have ready in minutes on workdays, so I make these on Sunday afternoons, and warm one up to eat with my coffee for breakfast during the week. Sometimes I take one with me to warm up for a break later in the morning, if I decide to have something different for breakfast. If you use your imagination, you can easily change this up with different veggies and seasonings. Enjoy!
